Fresh Strawberry Juice Glass Pudding

This simple pudding, thickened with unflavored gelatin, is good to have on hand for when you want something comforting with a hint of sweetness. Divide the mixture into juice glasses for perfect portioning.

You can substitute another fruit for the macerated strawberries if desired. If you crave something sweeter, add another tablespoon of sugar.

Ingredients

  • 2 cups sliced fresh strawberries
  • 2 tablespoons plus 1/2 cup granulated sugar, divided use
  • 1 (1/4-ounce) package gelatin powder
  • 1/4 cup cold water
  • 1 cup milk
  • 1 cup plain Greek yogurt

Instructions

In a bowl, combine the strawberries and 2 tablespoons of the sugar. Set aside for 20 minutes, or until the strawberries soften and juices form.

Meanwhile, in a bowl, sprinkle the gelatin over the water and stir to dissolve. Set aside for 10 minutes.

In a small saucepan over medium heat, combine the milk and the remaining 1/2 cup of sugar. Bring to a simmer, swirling the milk until the sugar completely dissolves.

In a blender, combine the yogurt, strawberries and their juice, gelatin, and milk and process until smooth. Divide among six juice glasses. Refrigerate for 2 or more hours, or until firm.
